Chocolate Chip Coconut Oat Cookies
Chocolate Chip Coconut Oat Cookies are a fun upgrade on a classic original. They have a chewy exterior and soft interior. These cookies are filled with chocolate chips, sweetened coconut flakes, and oats.

Today was a perfect Saturday. We didn’t have anywhere to go, and it was a nice change to just sit at home and chill. The kids played nicely together and had ‘pajama day’. Chris worked on some college work and watched pre-season football.
This recipe was inspired by an episode I watched of Pioneer Woman on the Food Network. I mentioned to Chris making some monster cookies, and asked if he would enjoy them.
He told me the monster cookies sounded good minus the M&M’s, peanut butter chips, Rice Krispies and pecans.
Laughing, I pointed out that he basically wanted a chocolate chip cookie with oats.
He said, “I don’t know. Maybe also coconut.”
Laughing, I said, “Ok. We will have monster cookies minus everything that goes in them. Add oats and coconut.”
As the first batch cooled, he closely inspected each individual cookie before deciding which ones would make the cut. ~ Around 2019

Ingredients You Will Need
- 2 and 1/4 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup (2 sticks) butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups chocolate chips
- 1/2 cup dry, sweetened coconut
- 3/4 cups instant oats



Preparing the Dough
To make this recipe, I use my favorite go-to chocolate chip cookie recipe and add 3/4 cups of dry instant oats and 1/2 cup of sweetened coconut flakes.

Ingredients
- 2 and ¼ cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup unsalted butter, softened
- ¾ cup granulate sugar
- ¾ cup brown sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups chocolate chips
- 1 and ½ cups sweetened coconut , sweetened coconut
- 1 and ½ cups instant oats
Instructions
- Preheat oven to 350 degrees. Line cookie sheet with parchment paper. Set to side.
- In medium sized mixing bowl, mix flour, baking soda, baking powder and salt. Set to side.
- In a large mixing bowl, beat butter, brown sugar and sugar on medium speed until well blended. Add vanilla.
- Add eggs, one at a time. Be careful not to over mix.
- On low speed, add dry mix slowly.
- Add chocolate chips, coconut and oats.
- Mix well with spoon or by hand.
- If dough seems soft, refrigerate for two hours.
- Using a small ice cream scoop (about one tablespoon), scoop cookie mixture into small, equal sized balls onto lined cookie sheet. Space 1 and a 1/2 inches apart.
- Bake at 350 degrees for 11-13 minutes or until edges of cookie turn golden brown.
- Let cookies rest for 5 minutes before transferring to cookie rack.
- Cool cookies completely before placing in an air-tight container. Cookies will remain fresh for up to 7 days.
Oh mer gosh! Very recently, I grabbed a packaged cookie while running through a lunch line and it was scrumptious. Oats and chocolate chips and coconut . . . As I devoured it in exactly 2.2 seconds, I knew I needed a similar recipe. I am so excited to find this!

These look amazing but was wondering if you could use regular oats? I don’t want to buy a container for such a small amount… would never use them!
Hi Joanna! I’m sure you can! I am actually going to be updating this post this week and trying them both ways. Check back in a few days or email me, and I will let you know how they turn out. I think they will work just fine, but have a chewier texture.
